Make your meal stretch the whole week

With a little advance planning you can crank your stove into autopilot and get a week's worth of meals on the table faster than you can complain about having to do so. Chef Kathleen Daelemans, author of Getting Thin and Loving Food : 200 Easy Recipes to Take You Where You Want to Be was on the Today Show to share her meal stretching ideas. I often try to do this myself.
