Oatmeal Peanut Butter & Banana Muffins

I made these this week since I had some over ripe bananas and didn't feel like making banana bread again. Oh my these were sooooo good! I used the mini muffin ones.


Ingredients:

1 1/2 cup flour
1 cup oatmeal (either instant or long cooking)
1/8 cup Splenda Brown Sugar Blend or Brown Sugar
3 tsp baking powder
1/2 tsp salt
1/3 cup reduced-fat peanut butter
1 cup 1% milk
1 egg
2 medium over ripe bananas (mashed up)
1 tbsp sugar
1/2 tsp cinnamon




Preparation:

In a large bowl, mix the flour and the oatmeal together, blend in brown sugar Add baking powder and salt, mix again until well blended.
In another bowl (or in a blender or food processor if so desired) mix the peanut butter, milk, (liquid maple flavor, if that's what you're using), egg and bananas. Mix well, then combine with dry ingredients, just until dry ingredients are moistened.
Fill muffin tins 2/3 full with batter. Sprinkle sugar and cinnamon on top.
Bake at 400 degrees for 20 minutes

Makes 12 muffins or 24 mini muffins!
