Chocolate chip zucchini bread

My sister in law passed along this great bread recipe that I brought on my recent vacation. The kids loved it as well as my parents. A great way to sneak in some veggies for the kids as well as use up zucchini!

3 eggs
1 cup vegetable oil
2 cups sugar
2 tsp. vanilla
2 cups shredded zucchini
3 cups all purpose flour
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1 c. chocolate chips


Combine eggs, oil, sugar, vanilla; beat until smooth and thickened. Stir in zucchini and flour, soda, baking powder, salt, spices. Fold in chocolate chips
Spread batter in 2 greased loaf pans or in muffin cups, Bake loaves at 350 degrees 1 hour or until wooden toothpick comes out clean.
