Easy Applesauce cake

This is an easy cake to make. If you have a lot of apples using homemade apple sauce is wonderful in this.

Ingredients:

1 cup butter or margarine, softened
2 cups sugar
2 cups apple sauce
3 cups sifted all-purpose unbleached flour
1 ¾ teaspoon baking soda
1 cup raisins
1 teaspoon vanilla

Instructions:

Preheat oven to 350F. Grease a medium sized baking pan and lightly sprinkle with flour. Set aside. Beat the butter and sugar in a large bowl. Add the applesauce (make sure it’s cold) and 2 ¾ cups flour. Mix well. Add in the raisins, remaining flour and vanilla extract. Mix well and poured into greased baking pan. Bake approximately 1 to 1 hour and 15 minutes until golden and baked through. Let cool for 5 minutes then remove to wire rack to cool completely.

Note: You can also add 1 cup chopped walnuts to this bread when you fold in the raisins.
