Frugal Dinner planning week of April 29th

No eating out last week! Yeah  we got a few bills coming up for some summer camp that not eating out 2-3 times a month can handle easily!  It is all about the menu planning especially with baseball, soccer and karate plus cub scouts keeping us running every night.    There is someone eating from 5pm-8pm every week night so Saturday and Sundays seem to be our only nights when all 5 are eating at the same time lately.


Sunday   Turkey burgers, French fries   

Monday  Mexican Lasagna  check out the recipe   (our early celebration for cinco de Mayo) 

Tuesday    Meat sauce over pasta 

Wednesday Ham sandwiches  and carrots on the side 

Thursday  Baked Ravioli  casserole- just layer the ravioli in a  casserole dish with spaghetti sauce .  I add in some fresh spinach plus peppers etc  to get some veggies in there.  

Friday Ham and broccoli  quiche plus roasted potato this is the last of my ham that  I got a good deal on from easter 


Saturday   Pizza or I may do some burritos in honor of cinco de Mayo

Frugal Meal planning week of April 22nd

We had a great spring break! We did go out to eat one time on Thursday which was planned and a coupon was used! It is usually a special treat in our family. We made it to the movies once with passes that were a gift from one of the aunts!


Sunday Trader Joe chipotle Lime chicken burgers-these were good did french fries and roasted potatoes


Monday  Ham and Pasta casserole! Using our leftover ham


Tuesday  Cheesy Beef and Broccoli  (check out the recipe)




Wednesday  Chili  over baked potatos
slow-cooker salsa chicken
Thursday  Chicken salsa chicken  over brown rice (check out the recipe)


Friday  We should have some leftover this week! So it will be clean out the fridge night


Saturday  We have a family birthday celebration which will be a cookout. I will be making a pasta salad.

Keep or toss tax paperwork

I filed my taxes at the beginning of March and have already received my state and federal. Now the question is how long do I keep the paperwork associated with the tax returns. Kim Lankford,  contributing editor of Kiplinger's Magazine, explains why post-tax season is the best time to purge your life of papers and clutter.

1. Keep your tax returns the 1040 and the forms for atleast 5 years You may need it for a mortgage or disability insurance. You can go and scan them on your computer 

 2. Home purchase price and home improvements for when you sell your home It can help lower your tax bill when you sell

 3. You can get rid of the supporting documents money market investment documents, cancel checks, 4. You can toss (actually shred) bills like credit card bills, utiltiies bills after one month.

 5. Your paystubs you should save until you get your annual w-2 to make sure that they match up.

Budget Dinner planning week of April 15th

It is spring break here! The schedule maybe a bit loser. The growing  boys  can eat me out of house and home.  We did some baking this week-pumpkin bread and brownies for snacks. I got some rice cakes, crackers and extra fruit.    I also made a ton of breakfast burritos a few weeks ago because they like those as well.

Monday  Ham and broccoli  quiche  (using leftover ham from last week-you will see ham on the menu over the next couple of weeks) and roasted potatoes

Tuesday Chicken and Broccoli over brown rice  (went to Trader Joes and picked up some orange chicken-hopefully this will satisfy some Chinese takeout)

Wednesday Sandwiches  ( my oldest wants to see hunger games so we will be seeing that late afternoon show)

Thursday  We are heading into Boston for the day so  I will bring some snacks and then plan on using a restaurant.com gift certificate for a late lunch early/dinner.  

Friday  Taco bar-got some taco meat in the fridge, beans, sour cream.

Saturday  we are at a soccer tournament for the whole day. I am packing food for the day and plan on doing a super easy dinner of Hot dog and french fries

Frugal menu planning week of April 8th

Soccer and baseball plus soccer are keeping us really busy! However we are keeping to the menu all with a bit of menu planning.

Ham Christmas Dinner 2009 Sunday Easter Dinner at my sister bought drinks, cups, sweet potato casserole and cookies

Monday  Ham, roasted sweet potato, and green beans

Tuesday Mexican Lasagna  this will give me plenty of lunch leftovers
Simply layer, cooked chicken tortillas, beans, salsa, diced tomatos, and cheese in a 9 x 13 pan and baked until cheese is melted. This is even better as leftovers.  I got 2 packets of Chi Chi multi grain tortillas for practically  free this week  between coupons and their sale.

Wednesday  Beef and Broccoli

Thursday  Cabbage rolls

Friday  leftovers....  or tuna and pasta if leftovers are gone.

Saturday Eating out!  I got it planned. Got a gift card that should cover most dinner.  we are going to be out and about all day.

Frugal Meal planning week of April 1st

Well some of the craziness has died down. Dad came home from the rehab center so him and Mom are nicely settled back in.  I made them a batch of meatballs and beef and broccoli.  Basketball season is now over and now soccer and baseball season starts. Luckily, practice for soccer and baseball are the same night on the same complex so I am not running all over town.   


I did get to eat out twice last week .Had a mini High school reunion  and then got a date night with hubby and another couple on Saturday.   Both of those are rare occasions. 


Here is the menu for this week


Sunday Steak, roasted potatoes, green beans and eggs 


Monday Chicken sausages, baked spinach casserole 


Tuesday  Pork chop,  Stuff baked potatoes with broccoli 


Wednesday  Salisbury steak, mashed potatos, over veggies 


Thursday   Meat crusted pizza  (this is good filling meal especially if you are looking to go low carbish)  


Friday Fish (picked up some tipilia )


Saturday Homemade pizza
