Simple Chicken, Broccoli and rice bake

I have made this a few times and everyone seems to like it around my house. Just thought I'd share it . . . it is a good way to sneak in some veggies into the kids!

Chicken rice bake

1lb cut up diced chicken breast-uncooked

1 can (10.75 oz) 98% FF cream of chicken soup

1-1/3 c. water

¾ c. uncooked white or brown rice (add 20 min. to cooking time for brown rice)

2 c. (at least) broccoli florets (I use 3-4 cups)

½ t. onion powder

¼ t. black pepper

1 T. soy sauce

optional mushroom



Mix soup, water, rice, broccoli, onion powder, pepper & soy sauce in 2-qt shallow baking dish. Top with chicken. Sprinkle additional pepper on chicken.

Cover and bake at 375 degrees for 45 minutes (65 with brown rice).
