I made a batch of this soup since it is starting to get cold! It is perfect for lunch-if you are doing low carb, or even weight watchers! This is such a healthy and easy chicken soup to make!!
5 cups chicken broth (I make mine using boullion, but canned would be fine)
1 10 oz. box frozen spinach
1 10 oz. can white chicken breast, drained and broken up or 1 cup of chicken diced very small.
2 eggs, beaten
Heat broth until boiling. Add frozen spinach and chicken and cook until the spinach is seperated and not frozen. Bring back to a boil. Pour half the egg mixture in by swirling it around the broth mixture. Using a spoon stir until the egg hardens. Repeat with 2nd half of egg mixture. Simmer 10 mins. and serve with Parmesan sprinkled on top
