I love pumpkin and I love soup and I love sausage! How about
mixing them all together for an easy pumpkin sausage soup! This is a great easy recipe. It warms you up inside and tastes the
way a fall soup should, pure comfort.
1 lb package Hot Italian sausage out of its casing-use turkey sausage
to lower the calories. I have also used the Jimmy Dean sausage as well.
1 diced onion
1 Tablespoon Italian
seasoning1 cup sliced mushrooms
1 cup canned pumpkin
3 cups chicken broth
1/2 cup half and half (or evaporated milk)
1/2 cup water
Add pumpkin and the chicken broth to this and stir well,
Brown the Italian sausage, drain, then add onion, garlic, mushrooms
and seasonings and saute until it is done in a large stockpot on the stove.
Add pumpkin and the chicken broth to this and stir well,
Simmer 20 minutes
Stir in half & half and water, simmer on low another 5 minutes or until heated thru.

use Jimmy dean or plain sausage make sure you add extra Italian spices want a
kick.
