Quick and Easy Chicken Parmesan Recipe

Here is a family favorite recipe very yummy and easy to make!
2lbs cup up chicken breasts or other pieces of chicken skin removed
1/3 cup water
1/2 teaspoon seasoned salt

1/2 cup parmesan cheese, grated
1. Place chicken in a 13 X 9 X 2 inch baking dish. Add the water. Sprinkle with seasoned salt and cover well with parmesan cheese
2. Bake in a 475 degree oven for 20 minutes.
3. After 20 minutes, reduce the heat to 375 degrees and cook for an additional 10 minutes or until the chicken pieces are done.

This is perfect with some garlic roasted potatoes on the side or add some pasta!

Burrito Skillet

Burrito Skillet

I haven't tried this one yet, but it will be on my weekly menu within the next few weeks! very quick and easy, not too expensive.

1 lb ground beef or ground turkey
1 pkg taco seasoning
1 can kidney beans, drained
1 cup salsa
1 cup water
4 flour tortillas (6") cut up
1 cup shredded cheese

top with sour cream and green onions (optional)



1. Brown meat; drain

2. add seasoning mix, beans, salsa and water. Bring to a boil. Reduce heat to medium-low; simmer five minutes

3. Stir in tortillas; top w/ cheese. Cover; let stand 5 minutes or until cheese is melted.

Frugal Menu planning Aug 26th

I have to head out to the grocery store this morning, but it will be another pantry challenge weeks as funds are still tight! My husband will be getting commission again at the end of September-we haven't had a commissionless month in 3-4 years. So it has been back to basic frugality for us! Thankfully a pretty full pantry plus an overflowing garden! Here is what I keep in my pantry

Tues Open house for school 4-6pm so an easy crockpot dinner Crockpot chicken Salsa I haven't made this one in while!! Fresh tomotoas added

Wed FIRST DAY OF SCHOOL!! I may sit home and eat bon bons all day long!! Mexican Lasagna Doing the meatless version I may add some extra red peppers in there.

Wed Lasagna without the noodles (hubby is trying to watch his carbs) We hav done this in the past and it is quite filling. Good for any one on South Beach diet or Atkins.
