Quick and Easy Cheesy Broccoli soup!


We are doing Soup Wednesday in our house during the Fall and Winter months.  I love having something warm to eat. I love soup after a chilly fall  walk or  Christmas shopping trip. It is a good idea to make up more than you need as it is wonderful to have some ready, just to heat up when you need it. Soup usually tastes even better as leftover for lunch after a couple of days in an air tight container in the fridge!   

This Broccoli soup was gotten from the south beach diet boards and would be for phase 2. 

Easy Cheesy Broccoli soup!
1 cup chopped onion
2 garlic cloves, minced or garlic powder
3 cups reduced fat , less-sodium chicken broth
1 (16-ounce) package  chopped frozen broccoli
2 1/2 cups 1% milk 
1/3 cup whole wheat flour
1/4 teaspoon black pepper
8 ounces Velveeta
Heat a large nonstick saucepan coated with cooking spray over medium-high heat. Add onion and garlic; saute 3 minutes or until tender. Add broth and broccoli. Bring broccoli mixture to a boil over medium-high heat. Reduce heat to medium; cook 10 minutes.
Combine milk and flour, stirring with a whisk until well blended. Add milk mixture to broccoli mixture. Cook 5 minutes or until slightly thick, stirring constantly. Stir in pepper. Remove from heat; add cheese in small pieces, stirring until cheese melts.

Place one-third of the soup in a blender or food processor, and process until smooth. Return pureed soup mixture to pan.  This is really good filling soup that all of my kids enjoy.
